I have been in love with chocolate mousse for most of my life. The simplicity of the dessert makes it all the more elegant to me. I seem to remember always choosing chocolate mousse off the dessert menu when I was younger. Nothing else could make my 10 year old self feel more grown up then mousse au chocolat served in a martini glass.
For a classic French mousse you can't go wrong with Julia Child's recipe but since I'm not really into eggs these days I've made a slightly different version. I've recently learned that you can put avocado in everything so I did some research on avocado mousse and decided to make a chocolate avocado mousse pie...
What You'll Need for the Crust...
2 cups raw almonds
1 cup raw walnuts
1 cup dates, pits removed and soaked in water until soft
Place everything in your food processor and process until combined. Press dough mixture into pie plate. I suggest starting with the edges first. Pop in the fridge to chill out for an hour or so.
I had a lot of strawberries on hand so I added a bottom layer after the crust had chilled for a bit.
Now for the surprisingly delicious raw version of chocolate mousse...
Blend the following in either a blender or food processor...
2 avocados
3/4 c dates, soaked in water until soft
1 cup rice milk
1/2 cup almond butter
1/2 cup agave nectar
3/4 cup raw cacao powder
Pop in the fridge to chill and spoon into prepared crust!
