For the past few weeks my world has revolved around food. Whether at work or at home, I am always surrounded by food. Last week when I was spending some time on the cape my dad commented on how often he saw me in the kitchen. I'm not sure if I spent more time on the beach or in the kitchen eating. Before dinner my brother and I snacked on mango salsa with baked pita chips...
For dinner my mum and I made grilled pizza with fresh figs, brie, rosemary, truffle oil, and mixed greens. Trust me it tasted a million times better than it looks. I should have let the pizza dough rest for a bit longer before attempting to roll it out...
And of course I had plenty of Skinny Girl Margarita on hand...
I've also been venturing past the Vegan boundaries and have treated myself to cheese a couple of times a week and I may have had a bite of lobster salad a few days ago...I know, I'm getting a little crazy this summer. Last night at Local 149 Anthony, the chef garde manger, made the most amazing quinoa burger for me. I wish I had taken a picture of it but I ate it too quickly! He also makes the most beautiful salads which have served as inspiration in my own kitchen. All it takes is a little creativity to turn whatever you have on hand into the perfect summer salad. I also learned what a difference fresh herbs and sea salt make! Tonight's salad consisted of mixed greens, cilantro, chives, sea salt, nectarines, oranges (I learned how to supreme an orange the other day at work!), chopped tomato, and grilled tempeh. I added some stuffed grape leaves on the side. I made a simple dressing of stoneground mustard, grape seed oil, sea salt, lemon juice, and hot sauce. The salad was the perfect end to a hot summer day.
Well actually this was the perfect way to end the day...
