Baking requires precision, patience, and finesse. Usually I would rate myself pretty low in these categories but I surprised myself this afternoon. Caitlin, Katie and Katie came over tonight for dinner, wine, and a little creative project so I wanted to serve something special for dessert. I decided to make a Blackberry Peach Mousseline Tart. For the tart filling I made peach creme mousseline which basically means a peach pastry cream that's been beaten until light with butter (lots of butter!!!) and finished the tart with blackberries. The result was a rich but light and airy summer dessert.
